Fun in the Kitchen...

       I have been a vegetarian for almost four months now, although due to time constraints and just pure laziness I have often settled for boxed and pre-packaged meals. My ultimate goal is to eat completely organic and as close to the earth as possible, and do away completely with preservative laden foods. I have set a goal for myself to prepare two new vegetarian recipes a week and give a review of the recipe to determine if it deserves a place in the All-Mighty recipe book.
     I had loads of fun today first of all I prepared and drank a green shake this morning...made with fresh spinach, yogurt, canned crushed pineapple, fresh blueberries, and some vanilla whey protein...it was quite yummy!


    For lunch I prepared a deliciously appetizing  spinach avocado salad...and a nice glass of red zinfandel...


    Tonight I prepared a scrumptious dish.... Black Bean and Toasted Corn Soft Tacos... and I must say that this delight to the taste buds will most certainly hold a place in the All-Mighty recipe book. In my future preparations I will be sharing recipe specifics with you all. With step by step pics and the finished dish.


    I cannot forget the beautiful dessert that my lovely daughter prepared....Oh how fantastic it turned out! I had such a fun day preparing meals from scratch. I forgot how much I truly enjoy being in the kitchen...I think the cooking fairy has sprinkled some of her creativity dust on me...I am feeling a bit excited and anxious to try more new recipes:-)

  1. watch those pre-packed meals from Indian manufacturers. They are safe to eat but I ate those for one week non-stop and at the end of the week I could eat no more of those. Maybe its the preservatives in them.

  2. Hi! I commend you on your vegetarianism; so far I've only been able to give up red meat and pork, and have a lot of respect for folks who go cold turkey (pardon the expression).

    Anyway, as you hunt for vegetarian recipes, I recommend reading this blog: http://www.sabjimatablog.com/

    She posts awesome egg-free vegetarian recipes (her palak paneer recipe is awesome) that are easy to follow and easy to make. Also, I've got a copy of Madhur Jaffrey's World Vegetarian, which is an excellent collection of delicious global vegetarian recipes, also easy to make.

  5. Oh my, that food looks amazingly yummy!!

    I have the same goal, I'm making a lot of gradual changes in my diet and eventually would like to stick with nothing but organic, healthy foods. I've been eating a lot of locally grown veggies, whole grain rice and pastas. And while I do still eat meat, I don't eat it as much... and I try to only buy the organic, free range chicken and beef.

    I am feeling inspired to find some new recipes and cook, now :)
